As a pregnant woman, you really need to take care of what you eat, because what you eat is what your baby is eating. I want our baby to be healthy, so each day, I try to eat the best I can for her and for me.

I will be honest, it’s not easy every day! The problem for me is that during my pregnancy, my appetite reduced a lot. It might be unusual to read, but yes, I don’t have many food cravings, I don’t feel like eating all the time. However, for her, I force myself to eat every 3 hours, so that we both gets enough food every day.

I have to admit sometimes, Leandro needs to remind me to add some things in my diet to have a more complete diet, because yes as a vegan, we need to look even more carefully on what we eat during pregnancy.

That’s why, yesterday, I decided to add a new routine to my life for the last months of my pregnancy: I will prepare myself a green smoothie for my afternoon snack.

It was so good that I want to share with you the recipe.

It is for everyone, pregnant or not, vegan or not, but it’s definitely for people who want to eat healthy!

Green Smoothie Mango - Spinach PranaTerra 2

Ingredients (serving for 1):

  • 2 handfuls of spinach (rinsed)
  • 1 mango (peeled and in small pieces)
  • 1 Tbsp of chia seeds
  • 1 tsp of coconut oil
  • 20 cl of rice milk (or any vegetal milk)
  • 1 Tbsp of hazelnut cream
  • 1 Tbsp of syrup (agave or maple for instance)

Method:

  1. Pour the milk, hazelnut cream, syrup and the coconut oil into a high-speed blender.
  2. Add the spinach, mango and chia seeds.
  3. Blend until smooth.
  4. Pour into glasses and serve.

Tip:

You can add cinnamon for taste. Mango can be replaced by a banana.
